2 meal Spanish chicken

This is a delicious and easy make dish and full of big flavours. This could be done in the slow cooker as well as the oven. A nice variation on the standard roast too. To make a second meal, use the chicken bones to make a stock for a risotto the next day.

Ingredients

  • 1 large chicken

  • 5-6 large garlic cloves sliced

  • 2 large red onions chopped

  • 2 red peppers chopped

  • 1 cup black olives

  • 2 tins tomatoes

  • 12-15 new potatoes (small)

  • 1 tube tomato puree

  • 2 tbsp olive oil

  • 5 tsp paprika

  • A good glug of red wine

  • 1/2 tsp salt, few cracks of pepper

  • 1tsp oregano and 1 tsp thyme

 

Directions

  1. Prepare your large chicken in the normal way (organic is preferable).

  2. Pour on 2 tbsp of olive oil and add the salt, pepper and paprika.

  3. Dot the potatoes, garlic cloves, onions and peppers around the chicken.

  4. 1 hour into cooking, give it a good stir and add in the olives, tinned tomatoes, red wine, puree, oregano and thyme.

  5. Cook at the temperature and time directed on your chicken (usually 170c for 1.5 hours)

  6. Serve with some nice leafy green vegetables.


Notes

If you want a super easy dinner that cooks while you’re out, its no problem to throw everything in together at the same time, it still tastes delicious!
