Energy balls (AKA little balls of goodness)

5 minutes, 20 servings

The only way to stop yourself reaching for the digestives is to have some healthy and accessible alternatives in the house. Energy balls are a great option popular with the whole family. They are quick and easy to prepare and contain lots of goodness!

Whereas most recipes use oil, I use tahini in my recipe instead, a great source of calcium especially for the dairy free.

Ingredients

  • 170g cashews

  • 7 dates

  • 2 tbsp raw cacao

  • 1 tbsp tahini

  • 1 tsp vanilla extract

Directions

  1. Whizz up the cashews in a blender (almonds are fine if you don’t have cashews)

  2. When they resemble more of a powder, add in all the other ingredients in any order

  3. Squeeze a small handful of the mixture between your fingers and roll into small balls (you can roll the balls in cacao nibs, raw cacao or protein powder if you wish

  4. Refrigerate

  5. Watch them disappear quickly

Notes

  • Tahini is made of sesame seeds which are a great source of calcium so these are a great option if you have a dairy free diet.

  • Use raw cocoa rather than regular cocoa to reap the health benefits of antioxidants.
