Quick veggie-bean chilli

15/20 minutes

This is a quick, yummy dinner, great for batch cooking and popping in the freezer for those busy nights.

The beans are a great protein upgrade to the dish too.

Ingredients

  • Big glug of olive oil

  • 2 chopped red onions

  • 2 chopped red peppers

  • 6 chopped garlic cloves

  • Half tube tomato purée

  • 1 tsp cinnamon

  • 1 tsp molasses

  • 2 large handfuls spinach

  • 300g black turtle beans

  • 100ml water

  • Seasoning

 

Directions

  1. Heat the olive oil (not to smoking point)

  2. Add the onions and chopped garlic until slightly browned

  3. Add red peppers and cook until they soften

  4. Add spinach and beans and stir until spinach softens

  5. Add purée, cinnamon, molasses and seasoning and stir

  6. Add water, stir and cover

  7. Cook on a medium heat on the hob for around 40/45 minutes

  8. Garnish with fresh coriander and sour cream or guacamole.
