Beautiful brussels

If brussel sprouts make you think of overcooked Christmas dinners, try this nice all year round dish literally packed with cruciferous vegetables!

Ingredients

  • 1 cup cauliflower

  • 1 cup broccoli

  • 1 cup Brussels sprouts (halved)

  • 2 cloves garlic, minced

  • ½ cup vegetable broth

  • Pinch of dried chilli

  • Juice from half a lemon

  • Olive oil

  • Season to taste

 

Directions

  1. Place cauliflower, broccoli and brussels in a large pan with 1 tbsp olive oil, garlic, chilli and seasoning.

  2. Cook for about 20 minutes stirring occasionally, adding the vegetable broth gradually until it is soaked up by the vegetables. 

  3. Towards the end when the vegetables look cooked, add the lemon juice and stir. 

  4. Season if preferred. 


Notes

  • Out of all the cruciferous vegetables, brussels contain the most glucosinolates, compounds which are really good for balancing hormones. They are also a sulfur containing vegetable which helps support detoxification.
