Slow Cooker Beef Casserole

Ingredients

500g organic grass reared beef (cubed)
2 litres beef stock
6 carrots (chopped)
5 sticks of celery (chopped)
30g pinto beans (see notes)
1 onion (chopped)
4 cloves of garlic (chopped)
½ tube tomato puree
1 bay leaf

1 tsp thyme
½ tsp salt
Black pepper

 

Directions

  1. Brown the beef slightly for a few minutes.

  2. Put the beef and the rest of the ingredients, in any order you wish, in the slow cooker on high, the night before you want to eat it.

  3. In the morning, stir, turn down to medium and leave it until dinner time.

  4. Remove the bay leaf and serve with vegetables.


Notes

  • Apart from a host of other benefits, a cup of cooked pinto beans provides over 15 grams of protein.

  • Pinto beans can be canned or if from a packet, they should be soaked as per instructions and then boiled.  Or these can be substituted with lentils or a can of beans – i.e borlotti or black beans. 

  • If you prefer a thicker consistency, you can thicken it with a little flour / water paste.
